Pink Steak: Chef Julien Gremaud's Chophouse-Meets-Sushi Concept on South Dixie Highway

Pink Steak opened on South Dixie Highway in West Palm Beach in December 2023, the third concept from chef Julien Gremaud's Palm Beach portfolio, which also includes Avocado Grill and Avocado Cantina. Executive Chef Aaron Black, formerly of PB Catch, leads the kitchen day to day.

A Chophouse Menu Layered With Sushi and Raw Bar

The restaurant pairs classic chophouse offerings like Caesar salad, shrimp cocktail, and creamed spinach with sushi and creative small plates, an approach that opens with a spread of caviar and raw-bar selections before moving into heartier courses. Dishes have included a Wagyu hanger steak, a Pink Steak roll, tuna cones, beef tartare, and hamachi crudo, giving the menu range beyond a traditional steakhouse lineup.

A Playful, Design-Forward Dining Room

The interior leans into a distinctive, tropical-inflected design with pink accents, tropical murals, avocado-green booths, and whimsical touches like flamingo motifs and a giraffe sculpture. That stylish, contemporary setting is meant to match the ambition of the menu rather than play it safe with a conventional steakhouse look, giving the room as much personality as the plates coming out of the kitchen.
