Crux Coffee Roasters: Small-Batch Coffee Born From a Home Roasting Hobby
Tucked into downtown Abacoa, Crux Coffee Roasters built its reputation by doing something many coffee shops skip entirely: roasting its own beans on-site, in small batches, in full view of customers. What began as a home-roasting hobby for a Jupiter couple grew into a specialty coffee shop centered on freshness, careful sourcing, and a name with a bit of celestial meaning behind it.
A Name Rooted in Navigation
Crux Coffee Roasters was founded in 2016 by Dan and Victoria Rudden, who had spent years experimenting with home roasting before opening a shop of their own in Abacoa. The name comes from the Crux constellation, historically used by navigators to find their bearings, reflecting the couple's goal of helping customers navigate the world of specialty coffee. Dan's family had ties to an Italian restaurant, while Victoria's family ran a bakery chain in Bogotá, Colombia, backgrounds that shaped their approach to building a neighborhood coffee spot.
Small-Batch Roasting You Can Watch Happen
The shop roasts its coffee in-house, a process visible from the street thanks to the roaster set up near the front window. Single-origin beans, sourced from roughly ten countries, rest for at least 48 hours after roasting to let flavors develop before they're brewed or bagged for sale. Beyond hand-poured single-origin cups and espresso drinks, the menu includes cold brew on tap, slow-drip cold brew, and nitro coffee, along with whole beans to take home.
